Paris-Madras-Cayenne is a performance meal in wich I invite five people to enter a fully hand made space to share with me three dishes : a “french” curry, an “indian” curry and a guyanese colombo.


Thus doing, we consume together a little piece of french history : the engagisme trade, where south indian worker where sign up and transported to french colonies in order to provide a low cost labour force after the abolition of french slavery. The women and man who embarqued for this journey brougth with them herbes, seeds, spices and recipes and contributed to the many transformation of the french empire culinary landscape.
